I have been reading about this lately and it seems to go hand in hand with a low carb lifestyle. The number assigned to these foods can help us to make better choices when choosing what we should and shouldn't be eating. Check out this site to get a better understanding of how food affects our blood sugar levels ultimately making us fat when choosing the wrong foods. I just found out that popcorn is worse than a snickers bar which makes me want to rethink that popcorn I was thinking about splurging on at the movies.

Iced Coffee
2 iced coffee trays of frozen coffee cubes
1/2 cup Sugar-free Creamer
2 tablespoons Sweetener
2 cups water
1 tablespoon Vanilla
1 tablespoon unsweetened cocoa
This is what I use my extra coffee that is left over in the morning. I fill the ice cube trays with coffee then freeze them. The stronger the coffee the better. Mix all ingredients in blender. You can modify the water with milk, I usually fill the blender to the same level as the ice cubes and then blend. Good luck with this recipe, it is one my wife and I make all the time in the summer and at night.

Under Construction
This blog is under CONSTRUCTION, I am adding to it daily, please let me know if you have any suggestions or requests.
Hubby's Summer Salsa
Store bought Salsa doesn't compare to this Hubby home favorite. You are welcome to use different kinds of Peppers, I prefer habanero or Serrano.
2 Tomatillos, husk removed
3 firm plum tomatoes
One yellow or red bell pepper
1 Serrano or Habanero pepper
One half onion, finely chopped
Juice of 1 lime
1 head of Cilantro
2 tablespoons finely chopped flat-leaf parsley
Salt
Boil the tomatillos in a small saucepan for 5 minutes then drain. I put all the ingredients except for the onions in a blender and combine. Finely chop onions and put in last. Cover and let stand at room temp for one hour before serving. If not using refrigerate.
